This homemade gin is a great way to enjoy the flavour of Secretts seasonal rhubarb. Whilst this year’s maincrop rhubarb harvest is a little pink in colour, we’ve added raspberries into the mix to create a deeper coloured gin that tastes really fresh, fruity and delicious. The perfect drink to enjoy with friends as the evenings warm up.

INGREDIENTS:
- 900g rhubarb – cut into smaller chunks
- 300g fine caster sugar
- 1 litre of plain gin
- 250g raspberries (save some extra raspberries to use in ice cubes)
METHOD:
- Place the rhubarb into a tall, sterile container and add the sugar, shake to coat and leave for a minimum of 12 hours.
- Pour in the gin and tip in the raspberries – muddling together to ensure they mix in nicely with the rhubarb.
- Seal the lid tight and leave to infuse for up to 3 weeks, checking in each day and giving the gin a little stir now and again. You’ll probably find there’s a good flavour there in as little as 10 days.
- Serve with raspberry ice cubes and your tonic of choice!
